Just checking to see if there is an advantage in using copper vs PVC on supply line construction? I know PVC is easier to work with, that is for sure.

Well, technically, PVC isn't rated for holding pressurized air. Its strength and shock resistance can drop rapidly in hot or cold environments. Hooking up to a high pressure air tank? PVC is out.
Of course PVC certainly works well for unreinforced soda bottle rockets and a typical manual pump or 150psi air compressor.
But... if you are inclined to build reinforced high pressure rockets instead of just the standard soda bottles, it'd make sense to use pipe rated for air pressure.
(my launchers are all PVC since I don't plan on venturing into high pressure any time soon)
